BHM&CT Bachelor of Hotel Management and Catering Technology .The Hotel Management program offers students the opportunity to acquire the business management skills and hospitality finesse needed to develop a career in the expanding hotel and restaurant industry. An array of career possibilities are available to graduates in the areas of professional management in restaurants, hotels, resorts, hospitals, institutions, conferencing and catering, and recreation management.

Objectives

Curriculum

1st Semester
Students will able to understand basic cooking styles and different cuts of the vegetable, basic kitchen ethics, stock, and soup preparation

Students will able to understand different types of service, equipments, mise-en- place , mise-en –sense and also understand the  process of preparing, presenting and serving of food and beverages to the Guest.

Students will able to understand the cleaning procedure, room amenities, and front office standards check in checkout and all the tariffs related to the room, reservation, guest handling.

Students will able to understand all factors that influence the environment and waste management system in hotel
Students will able to perform the various aspects of computer application for all operational work in the hotel industry

Students will able to understand the concept of management and differentiate the levels of management. Leadership Control process and importance in the hotel industry.

2nd Semester
Students will able to understand the uses of ingredients in cooking , fish ,meat, poultry and egg preparation, different types of salad preparation.

Students will able to understand alcoholic and non alcoholic beverages, preparation of mock tail and cocktail, knowledge of the cutlery and crockery used in restaurants.

Students will able to understand Cleaning agents, usage and procedure ,
Basic Front Office Operations, rack rate , discount ,allowances , Guest Room Service.

Students will able to understand verbal and non verbal methods of communication, Letter and report writing and express their view in English.

Students will able to understand the tourism concept, types of tourism, development of tourism industry.

Students will able to understand Basic aspects of Food Energy system,
Essential food nutrients – Classification, Sources, Functions, RDA
Concepts of Balanced diet & Meal Planning

3rd Semester

Students will able to understand the different types of Condiments, Herbs and Spices Used in Indian Cuisine. Masalas , Pastes and Gravies in Indian cooking Commodities and their usage in Indian Kitchens.

Students will able to understand types of Menu, Banquets, Buffet their types, Room Service Duties and Responsibilities of service staff.

Students will able to understand Cleaning of Public Areas, Special Provisions for Guests, Safety, Security and First Aid procedures Guest cycle and Post Departure Services at Front Desk

Students will able to understand basic accounting skills , Accounting meaning ,Account Records Journal Entries, Ledger, Financial Statement, Depreciation Reserves and Provisions

4th Semester

6 Months  industrial training in 3,4and 5star hotel properties students will get an opportunities to learn and observe the various functioning of different departments of a Hotels and interaction with Guest .

5th Semester

Students will able to understand Personality Enrichment, Etiquettes & Manners, Personality Development Strategies, Interpersonal Skills, Group Discussion, Telephone conversation, Presentation ,Electronic Communication Techniques

Students will able to understand the Regional Cuisines of Kashmir, Himachal & Uttarakhand, Punjab, Haryana & Delhi Rajasthan, Gujarat , Maharashtra & Goa. Learn about famous dishes, methods of cooking and equipments.

Students will able to understand Bar operations and learn about Alcoholic Beverages ,Wines ,Classification ,manufacturing process ,Storage of wines.

Students will able to understand Housekeeping Supervision, Planning and Trends in Housekeeping, Budgeting,
Front Office Accounting and Night Auditing.

Students will able to understand Introduction to Marketing , Marketing Environment, Consumer Markets and Consumer Buyer Behaviour Distribution Channels, Product Pricing and Services Strategy Public Relations, Sales Promotions and Integrated Marketing Communication

Students will able to understand Introduction to Indian Hospitality & Related Laws in India , Laws Related to Hotel Operations, Employees, Guests, Public Health & Safety and Food & Beverage Services.

6th Semester

Students will able to understand journalism, hospitality & tourism, pioneers in hospitality & tourism journalism & media, creative travel, tourism & hospitality, writing media applications for hospitality.

Students will able to understand the manufacturing process of Beers,
Spirits, Aperitifs, Cocktails & Mixed Drinks and their preparation.

Students will able to understand Interior Decoration, Colours, Floor & Wall Covering, Computer Applications in Hotel Accommodation

Project work so as to sharpen the research skills, develop a practical understanding of the Hospitality system, attain some field experience. Students are required to prepare a project on a topic of their choice approved from Faculty from Institute/ Head of Department

7th Semester

Employee Motivation, Compensation & Benefit Management, Job Satisfaction, Organisational Culture, Disciplinary Action.

Students will able to understand the various aspects and importance of Safety Security in Hotels. Safety Security Tourist Destinations, Travel Documentation, Understanding VISA and Permits.

8th Semester

Students will get the opportunity of undergoing six months on the job training in their area of interest in Hotels, Restaurants, Catering Establishments and Tourism and Travel Agency

Eligibility (Duration: 4 Years)

BHM&CT

Passed 10+2 examination with pass in English. Obtained at least 45% marks (40% in case of candidates
belonging to reserved category) in the qualifying Examination.

Note:

  1. The Fee will have to be deposited at the time of Counselling.

  5. Students Fund for all the students is Rs.2,000/- p.a.

  8. Students who wish to leave the Institute mid-stream, will have to deposit the fee for the remaining period of the course as per judgement of the Hon'ble Supreme Court in the case of Islamic Academy of Education and others Vs State of Karnataka & PA lnamdar case.
