Food Production | Diploma in HM Specialisation

The basic motive of this eighteen-month diploma course is to prepare the students for the working in the Catering and Hospitality Industry. It includes theory and practical components covering food preparation, Cooking Principles and Practices, Food Safety and Hygiene. In the first year, the students are trained theoretically in the areas of food production and the last six months will be utilized as Industrial Training where the students will get an opportunity to work in real time environment and situations in the hotel which will enhance the practical skills of the students.

Course Objective

  • To train the students in acquiring all required skills for a kitchen personal.
  • To provide the knowledge about the all set of Food Production department.
  • To enhance the culinary skills of the students.
  • To impart the knowledge about the regional cuisine of India and day to day working atmosphere of a food production department in a star category hotel.
  • To create aware about food hygiene practices should followed by a kitchen personal.

Course Outcome

  • Performing the standard operations of food production relating to various cuisines, effectively and efficiently
  • Preparing exotic Indian foods and plan menu according to own judgment or as per instructions.
  • Preparing foods in continental/ Chinese kitchen of various food preparing organizations.
  • Managing the different work skills in the food production department.

Curriculum

1st Semester

To learn the basic skills of cooking food

Identification and uses of basic ingredients used in cookery

To develop the grooming and communication skills of the students so that they can present their selves in a better professional way

To know the different products and cooking agents used in cooking food

Learn the basic skills of operating a computer

To learn basic skills of bakery through practicals

3rd Semester

6 months Industrial Training of Students for the Industry exposure

2nd Semester

To know the famous food, ingredients used and different cooking styles of Indian cuisine

To learn making cold food preparations

learn the criteria followed for managing a kitchen area

To know the basic nutrients and their benefits for human being

Enhance the professional skills of the students

To improve the presentation skills of the students and to build up the confidence to express their views

Career Opportunities

Diploma in Food Production is designed to train the students for a specific job profile in a hotel. After completion of the course, the students would be able to work in many establishments such as restaurants, hotels, coffee shops, healthcare resident facilities and hospitals etc. Students gain the skills and confidence to join industry as Cook and will progress further as Senior Cook, Supervisor and can rise up to the level of Manager according to his/her experience in the industry. They can also become an Entrepreneur in the related field.

Eligibility Criteria

Duration: 1½ year including 6 months Industrial Training

The candidate should have passed Senior Secondary (10+2) Examination with atleast five subjects including English as a compulsory subject from any recognized Board/ University

Note:

  1. The Fee will have to be deposited at the time of Counselling.
  2. University Charges will be extra as per University norms.
  3. Fee once paid shall not be refunded under any circumstances.
  4. There will be an annual increase of 7% in tuition fee.
  5. Students Fund for all the students is Rs.2,000/- p.a.
  6. Life time Alumni Membership fee is Rs. 4,000/-.
  7. Hostel & Transport Charges will be extra.
  8. Students who wish to leave the Institute mid-stream, will have to deposit the fee for the remaining period of the course as per judgement of the Hon'ble Supreme Court in the case of Islamic Academy of Education and others Vs State of Karnataka & PA lnamdar case.
